Making Banana Aronia Berry Bread (+ chocolate chips) for Christmas Gifts

My husband’s father has an aronia berry farm, and in late summer, we like to pick berries to stock up for the winter.  These berries are very high in antioxidants, so we add them to several foods including smoothies and  banana bread.  Making the bread at Christmas time has become a family tradition for us .

Here’s our recipe (it’s not a family secret!):

Banana Aronia Berry Bread  with Chocolate Chips

Ingredients

1/4 cup vegetable oil

1 1/2 cups flour

1 cup sugar

1 teaspoon baking soda

1/2 teaspoon salt

1 cup of aronia berries

2 eggs (lightly beaten)

3 bananas (mashed)

3/4 cup of chocolate chips (we typically use dark chocolate chips)

 

Preparation

Pre-heat the oven to 350 degrees F.

Grease and flour loaf pans (we use small loaf pans – 8 or 12 per tray).

In a large bowl, whisk together flour, sugar, baking soda, & salt.

Then, mix in oil, bananas, & eggs. Stir in the aronia berries and chocolate chips (don’t overmix), and pour into the prepared pans.  Bake until a toothpick inserted in the center comes out clean – about 30-35 mins. Cool the loaves in the pans for a few minutes, then turn out and cool completely – right side up.

The boys – with the help of our dog, Nevah, picking berries off the vines in late September.  We then bring the berries home to wash and freeze for the winter.
